No egg, no milk pancakes

When you've got no eggs and no milk, this recipe for gluten-free vegan pancakes made with gram flour will come in handy!

  • 500g gram flour

  • 1 tbsp baking powder

  • 2 tbsp maple syrup (plus extra for drizzling)

  • 300ml almond or oat milk

  • 1 tsp vegetable oil

  1. Add the dry ingredients to a large bowl

  2. Slowly adding almond or oat milk and the maple syrup, whisk together to form a thick batter

  3. Heat oil in a non-stick frying pan and add a ladle of batter mix. Leave to spread out into a thick circular shape

  4. Look for air bubbles, browning and dry edges on one side then flip to cook the other side for 1 minute

  5. Serve with toppings of your choice and a drizzle of maple syrup

Tips

Gram flour is made from chickpeas and is naturally gluten free, making these pancakes perfect for any gluten-free family members or little ones.

Serve with strawberries, blueberries or chopped banana, along with a dollop of coconut yoghurt (or any dairy-free yoghurt of your choice).

Other delicious (and healthy) topping ideas include caramelised apples and raisins, mango and coconut, or a sprinkle of pistachio nuts (though remember that whole nuts shouldn’t be given to children under five, as these are a choking hazard for babies and children). Variations

Add a sprinkle of cinnamon powder to the batter to turn these into tasty cinnamon pancakes.
