Amaretti biscuits

Sweet and delicious almond-flavoured biscuits

  • 50g icing sugar

  • 150g caster sugar

  • 2 egg whites

  • 175g ground almonds

  • 1 tsp almond extract

  1. Preheat the oven to 200°C.

  2. Beat the egg whites until they form stiff peaks. Be careful not to go beyond the stiff peak stage, or you risk splitting the egg whites.

  3. Gently fold in the caster sugar, almond extract and ground almonds until you have a smooth mixture.

  4. Line a baking tray with baking paper and use a teaspoon to place small rounds of the biscuit mixture on the tray. Make sure they're spaced evenly.

  5. Brush each biscuit with icing sugar and bake in the oven for around 10 minutes, or until lightly browned.

  6. When the biscuits are ready, let them cool on a wire rack before serving.

Tips

To separate the egg whites from the yolks, first pop two bowls out on the counter. Crack an egg into your hand above one of the bowls, then move the yolk from hand to hand, letting the white run through your fingers into the bowl. Once all the white is gone, pop the egg yolks into the other bowl. Use the whites for this recipe, and hang onto the yolks; you can use them to make a classic custard or this no-cook carbonara sauce .
