  • 250g shortcrust pastry

  • 325g plain cooked beetroot

  • 3 eggs

  • 75g soft brown sugar

  • 2 tsp ground mixed spice

  • 5 tsp ground allspice (optional)

  • 5 tsp ground ginger (optional)

  • 250ml double cream

  • flaked almonds (to decorate)

  1. Roll out the pastry and use it to line a pie tin

  2. Line with greaseproof paper and fill with baking beans - bake blind for 20 minutes

  3. While the pastry is baking, prepare the filling by pureeing the beetroot along with the eggs in a food processor

  4. In a small saucepan add the sugar, all the spices and cream and bring slowly up to a simmering point

  5. Pour into the food processor and mix thoroughly with the beetroot puree

  6. Remove the pastry case from the oven and reduce the temperature to 180'C/Gas mark 4

  7. Pour the filling carefully into the pastry case and bake for around 25-30 minutes

  8. The edge should be puffed up a little and the centre will still be a touch wobbly

  9. Allow to cool and chill in the fridge

Tips

Make sure you blend the beetroot until it's really smooth

    Who knew beetroot - a much maligned vegetable - could taste so good. A lot of people are put off beetroot as all they know is the pickled variety but I urge you to try this recipe and take a different view of beetroot.

    Delicious! A lot of people are put off beetroot as they've only tasted it once it's been pickled. Unpickled beetroot is sweet and has a great texture and colour but, be warned, it stains everything in sight.
