  • 4 sweet potatoes

  • 125g butter, at room temperature

  • 1 red chilli, seeds removed, finely grated

  • 1 x 2.5cm piece of ginger, grated

  • Zest of 1 lime

  1. Preheat the oven to 200 ?C/Gas Mark 6.

  2. Place the potatoes on a roasting tray, pop in the oven and cook until soft and delicious (around 30-40 minutes).

  3. While the potatoes are cooking, mix all the butter ingredients together and put to one side. (This will make more than you need, however, it keeps well in the fridge in a sealed container for 2-3 weeks or the freezer for up to 6 months, and can be used for all manner of things).

  4. When the potatoes are ready, cut open and top with your butter.

Tips

For weaning babies: Try mashing the baked sweet potato flesh with a little plain butter for your little one. If you're further on in the journey you could cut the baked potato into chunks and serve as a finger food.
