Braised beef with sweet potato - Annabel Karmel

20g butter (or margarine)

1 leek (approximately 150g), sliced

125g braising steak, cubed

1 tbsp flour

100g button mushrooms, sliced

275g sweet potato (peeled and chopped)

250ml chicken stock (homemade or low salt versions suitable for babies)

1 orange (approximately 120ml), juiced

Preheat oven to 180'C/350'F/Gas mark 4

Melt the butter or margarine in a flameproof casserole dish

Sauté the leek for about 4 minutes until softened

Roll the meat in the flour, add to the leek and sauté until browned

Add the mushrooms and sauté for 1 minute

Add the sweet potato, stock and orange juice
-
Bring to the boil and transfer to oven for 1 hour 15 minutes, or until the meat is tender

Leave to cool

Once cooled, blend to the desired consistency using as much of the cooking liquid as necessary

Makes 6 child size portions!
Variations
Try with carrot or butternut squash, instead of sweet potato
