Carrot fritters
Healthy and delicious vegetable snacks

10 carrots

1/2 pepper (red, yellow or green)

3 eggs

3 tbsp plain flour

1 handful of parsley

1 garlic clove (crushed)

1 tsp curry powder

Salt (to taste)

Pepper (to taste)

Oil (for frying)

Wash the carrots, pepper and parsley. Peel and grate the carrots. Chop half the pepper into small cubes. Slice the parsley finely.

Fry the grated carrots, chopped pepper and garlic in a little oil until the vegetables have softened.

When the vegetables are lightly browned, take them off the heat and spoon into a large bowl.

Break the eggs into the bowl and add the chopped parsley and flour. Season with salt, pepper and a teaspoon of curry powder.

Mix to combine until you have a thick paste.

Use your hands to mould the mixture into evenly sized discs.

Fry the fritters in oil for around three minutes until golden and crispy. It's best to do no more than three or four at a time to avoid overcrowding the pan.

When the fritters are cooked, arrange them on a plate lined with kitchen towel to drain.

Serve hot.
