Caramelised banana slices
Rich and sticky banana slices to enjoy with Greek yogurt or ice cream

2 tbsp coconut oil

1/2 tsp ground cinnamon

40g soft brown sugar or coconut sugar

2 medium bananas, cut into thick slices

Melt the coconut oil in a large, non-stick frying pan over a medium heat. Once it is melted, stir in the cinnamon and sugar, stirring until you have a smooth thick paste.

Stir in 1tbsp water. Use kitchen tongs to carefully add the banana slices to the pan, spreading them out so they are not too close together. Fry for 2-3 minutes until sticky and golden, then turn with the kitchen tongs and cook for another couple of minutes until sticky and golden on the other side.

Serve warm, with a little of the sticky sauce from the pan spooned over the top if desired.

Variations
Swap the coconut oil for unsalted butter if preferred
