Caramel peach muffin

A lovely recipe to make a delicious pudding in the slow cooker...

  • 60g caster sugar (for the caramel)

  • 410g peaches (Drain tinned peaches but keep some syrup from the tin), halved

  • 50ml syrup (from peach tin)

  • 200g self-raising flour

  • salt

  • 70g caster sugar (for the batter)

  • 142ml milk

  • 2 eggs (medium)

  • 40g unsalted butter, melted

  • clotted cream (to serve)

  1. Place caster sugar (for the caramel) into the stoneware of your slow cooker and cook on the hob over a low heat until the sugar melts and turns into a light caramel

  2. Add the peach halves to the dish, round side down

  3. Mix the salt, flour and caster sugar (for the batter) in a large bowl

  4. Add the milk, eggs and syrup - beat into a light batter (take care not to over-beat)

  5. Meanwhile place the stoneware onto the heating base, brush the inside of the stoneware with melted butter, then add the remainder to the batter mix

  6. Pour the batter mix over the caramel peaches

  7. Place the lid on top and cook on Low for 2-3 hours or on High for 1-2 hours

  8. Once cooked carefully run a knife around the outside of the muffin, place a small plate on top and carefully invert onto the plate

  9. Serve with a large spoonful of clotted cream (or ice cream) on top

    Wow, what an amazing discovery, we had this pud after our family BBQ and doing it in the slow cooker ment I could enjoy the BBQ fully! Lovely sitting out of an evening eating a bowl of this with a huge dollop of clotted cream! X
