  • 1kg chicken

  • 300ml red wine

  • 300ml chicken stock

  • 2 onions, chopped

  • 2 carrots, chopped

  • garlic (4x cloves), crushed

  • 400g potatoes (optional)

  • 1 tsp thyme

  • 2 tbsp plain flour

  • parsley (to serve - optional), chopped

  1. Brown the chicken in a frying pan then place in the slow cooker and cover with veg

  2. Stir the flour and the herbs into the chicken stock

  3. Add equal quantities of wine and chicken stock - enough to cover all the food

  4. Stick on Low for around 8 hours or vary to suit you - 4 hours on High is the minimum I have done for a small quantity

Variations

Cooking on the hob: Brown the chicken as above, but in a large saucepan. Add the onions and cook for a few minutes until soft. Add the vegetables. Cover the ingredients with the wine and stock (mixed with the flour and herbs as above) and stir while you bring to the boil. Once boiling, turn down the heat and simmer on a low heat for 1 hour or until the chicken is cooked!
