Preparation

Preparation time

Cooking time
1 Hr
  • 170g butter, softened

  • 170g caster sugar

  • 3 eggs

  • 170g self-raising flour

  • 2 bananas (ripe/overripe)

  • vanilla extract (optional)

  1. Cream the butter into the sugar

  2. Gradually add the eggs and flour

  3. Mash the bananas and add them to the batter, mixing them in well
(don't leave lumps otherwise they will sink to the bottom when you cook
    the cake)

  4. Add a few drops of good vanilla extract

  5. Grease and flour a loaf tin and pour in the batter

  6. Bake at 180'C/Gas mark 4 for approximately 1 hour, or until the cake tests done (i.e test it by
sticking a knife in - if the blade comes out clean, the cake is ready - if sticky, give it a little longer)

  7. Check after 30 mins - if the top starts browning too quickly, cover with a piece of grease-proof paper to prevent burning

You will need

Tin loaf - This versatile large loaf pan is crafted from commercial-grade carbon steel with two layers of non-stick protection. You can get it at Amazon for £17.75.

Hand mixer - This one from Braun has multiple speeds and a variety of attachments to suit your every need. You can find it at Amazon for £79.99.

Tips

Kids will love mashing the bananas, and can also help with stirring the other ingredients together.

So easy to make (even I can do it) but I make 12 smaller ones and use 3/4 bananas. A real hit in our house with children and adults!

I've tried a few banana cake recipes and this is by far my favourite. I've made this at least 10 times and it's great every time. I sometimes add cinnamon.

I have work colleagues bringing in bananas so I can bake some more. They try to justify it by saying it's a healthy cake. I love baking it and they love eating it.

Hi I made this a few weeks ago and the kids loved it, I want to make it again tonight but I only have brown sugar in, has anyone made it with brown and it's been ok?

Really easy to do and great for using up bananas that are a bit best their best as saves from chucking them in the bin! I would probably adapt it to be a little bit sweeter next time as I have a sweet tooth and this didn't quite satisfy it :)

Finding myself with a handful of overripe bananas (and not being one for waste) I made this cake (but separated it into bun cases - for ease of eating for the kids). I also covered them in a swirl of chocolate butter cream and a haselnut. They were truly delicious. I wouldn't hesitate to make this recipe again and urge you to discard a few bananas so you've got an excuse too!

Tried this for my little boy who is dairy and soya free. He flipping loved it, and seen as he can't really have anything that's nice to eat (he's not interested in dairy free chocolate) this is a great cake for him, and it's got fruit in so I'm happy too

Such a quick and easy recipe to follow. Ideal for those bananas that are just a little soft and left in the fruit bowl!! A great tasting recipe, I've made it a few times now and they are great as individual muffins, ideal for packed lunches. I would recommend trying this recipe.

This is the first ever recipe i followed when i started baking for my children - it's so easy, so tasty & i fool myself into thinking it may be semi-healthy too! I often sub the caster sugar with soft brown sugar & it makes it more caramel flavoured ;)

Hi Emma. I always use 3 eggs and the cake turns out perfectly. I make banana cake (we call it banana loaf in our house) most weekends and I try and use a few grams less sugar each time. So far I'm down to 100g of sugar and you'd never notice.
