Beef fajitas

  • 1 tbsp olive oil

  • 1 onion, finely diced

  • 250g lean beef mince

  • 1/2 green pepper, deseeded and finely diced

  • 100ml passata

  • 200g kidney beans

  • 2 tsp ground cumin

To serve

  • 8 flour tortillas

  • Mixed salad leaves

  • 100g Cheddar, grated

  • 2 large tomatoes, seeds removed and finely diced

  1. Heat the oil in a large frying pan over a medium heat. Add the diced onion and cook for around five minutes, until softened.

  2. Add the beef mince, season and fry until cooked through.

  3. Stir in the diced pepper and the passata and cook for a further 2 minutes. Stir in the kidney beans and cumin. Simmer for 15-20 minutes until the beans are tender and you have a rich, thick sauce. Remove from the heat.

  4. Place the salad, cheese and tomatoes in separate bowls for everyone to help themselves.

  5. To fill a fajita, lay one of the tortillas on a plate. Add some salad leaves down the centre. Sprinkle over some tomato pieces, then some of the chilli, and finally some cheese.

  6. Tuck the bottom of the tortilla in, then fold the sides into the middle. Enjoy!
