Easy homemade cake pops covered in sprinkles

Preparation

  • 1 chocolate sponge cake

  • chocolate fudge icing (about 1/2 a tub of shop bought icing or homemade)

  • golden syrup

  • chocolate (plain or milk, to melt for covering)

  • choice of toppings (sprinkles, edible glitter, chocolate balls etc)

  1. Start off with a basic chocolate sponge cake - once it's cooked, leave it to cool and break into large crumbs

  2. You can then add about half a tub of ready made chocolate fudge icing and a dash of sticky golden syrup

  3. Get your hands in and mix the whole thing together - it should be sticky enough to hold its shape after you squidge it up a bit

  4. The next step is making the ball - about 2.5cm or golf ball sized is just right

  5. The balls then need to go in the fridge for a few hours to get nice and firm

  6. Once the balls are chilled, the chocolate can be melted - dip in the stick, push this gently into the ball, then chill again (maybe give them a quick blast in the freezer this time) to weld stick and cake together ahead of the final step

  7. After a few hours each cake pop should be firm enough to dip into a bowl of melted chocolate

  8. It's up to you if you want to just add a dab or fully immerse them, then dip into or sprinkle with whatever toppings you choose

  9. If you're going for total immersion, hold the cake pop in the bowl and swiftly spoon the chocolate over while it's still all melty

  10. Pop the cake pops back in the fridge for a final chill before watching them disappear in seconds!

Something to stick the lolly sticks in e.g. block of polystyrene or purpose made holder

Variations

Make vanilla or lemon sponge and use vanilla frosting

For white cake pops use white chocolate mixed with 1 spoon of shortening to thin the chocolate a bit

Try using different coloured glace icing for detail

For a drizzle effect, reserve some white chocolate and add some gel food colouring (liquid food colouring will make the chocolate go hard too quickly) - either use an icing bag with a thin nozzle or a tough freezer bag with the corner snipped off to get the right drizzle effect

    Cake pops are great fun to make and decorate. These are easy peasy and lovely for children to make. Just allow a bit of time for each stage so they can set and be ready to decorate. The trickiest bit is resisting temptation as they harden off before being ready to eat. Its amazing something that looks so good can be so easy but they really are. A great recipe for all ages.
