Sandwich fillers

Preparation

Egg mayo

  • 2 eggs

  • mayonnaise

  • mustard

  • black pepper (to taste)

  • chives (or cress)

Tuna mayo

  • 198g tuna in spring water (1x tin), drained

  • red onion, finely chopped

  • 100g sweetcorn (1/2 small tin), drained

  • mayonnaise

Crab style filler

  • crab sticks

  • apple, chopped

  • mayonnaise

  • black pepper (to taste)

Coronation chicken

  • cooked chicken, chopped

  • mayonnaise

  • mild curry powder

  • mango chutney

  • sultanas (or chopped apricots or sweetcorn - optional)

Brie & cranberry

  • cranberry sauce

  • rocket

  • brie

Egg mayo

  1. Hard boil the eggs - once boiled, peel off the shell and mash with a fork

  2. Mix in the mayo, mustard and black pepper to taste

  3. Serve on white buttered bread - so simple, so delicious!

Tuna mayo

  1. Drain the tuna and mix with the mayonnaise

  2. Add the finely chopped red onion and sweetcorn

Crab style filler

  1. Cut the crab sticks into small pieces - the smaller the better

  2. Dice the apple into small pieces

  3. Mix the crab and the apple with mayonnaise and season with black pepper

Coronation chicken

  1. Mix the cooked, chopped chicken with some mayonnaise

  2. Add a sprinkle of mild curry powder and mango chutney - taste

  3. Chuck in a few sultanas - if using

Brie & cranberry

  1. Spread bread with cranberry sauce, top with rocket salad and sliced brie

  2. Can be served cold or hot - toasted like a panini

Variations

Some more simple ideas:

Meat - wafer thin cooked meats, cubed chicken/turkey breast with tomato and lettuce, ham and cheese, roast chicken & houmous, leftover cold meats (chicken, turkey, meatloaf, sausages etc) with salad, chicken and mashed avocado, cold BLT

Fish - tuna mayo & sweetcorn, tuna salad, sardine and tomato, fish paste and cucumber

Veggie - grated cheese, cheese spread, cream cheese, Quorn slices and salad, cottage cheese with pineapple, cheese and grated carrot with a little mayo, veggie sausages, vegetarian pate with cucumber, cheese and coleslaw, egg salad/egg mayo, cheese and pickle/chutney, marmite

Sweet - high-fruit jam/fruit spread, nut-free chocolate spread, honey, treacle, lemon curd

    My DD2 is 4 and allergic to egg. almost all of these fillings contain egg in some form. She can be quite a fussy eater and when eggs are taken out of the equation i feel like im really limited as to what i can try her with :-(
