Painted biscuits

  • 100g butter, softened

  • 100g caster sugar

  • 1 egg (plus 1 or 2 extra egg yolks), beaten

  • 1 tsp vanilla essence

  • 225g plain flour

  • food colourings

  1. Preheat oven to 200'C/Gas mark 6

  2. Cream butter and sugar until light and fluffy

  3. Beat in the whole egg and vanilla essence

  4. Fold in the flour and mix until you have a smooth dough

  5. Chill the dough for an hour or so, before rolling out on a floured surface

  6. Cut into shapes with cookie cutters

  7. Beat the extra egg yolks and put a little yolk in 3 or 4 small bowls or cups

  8. Add a few drops of food colouring to each bowl/cup

  9. Paint each biscuit with a little of the egg mixture (using a clean paint brush or pastry brush), so that you have a few biscuits of each colour

  10. Place onto a greased baking tray and cook for around 10 minutes at 200'C/Gas mark 6

  11. Cool on the tray for a few minutes and then transfer onto a cooling rack
