Chocolate Easter Bunnies
Cute chocolate Easter bunnies that the kids will love...

170g chocolate chips (or buttons)

45g butter
-
300g marshmallows
-
180g Kellogg's® Rice Krispies®
Icing

140g butter

280g icing sugar
-
2 tbsp milk
-
0.25 tsp food colouring

Put the butter and chocolate in a large saucepan and melt over a low heat

Add the marshmallows and stir until the mixture is completely melted, then remove from the heat

Next add the Kellogg's® Rice Krispies® and stir until well coated

Using a buttered spatula, press the mixture evenly into a 15" x 10" x 1" greased pan

Cool slightly

Using one large round biscuit cutter, one very small circle biscuit cutter, and one rabbit head biscuit cutter, all greased, cut the cereal mixture into shapes

To make each rabbit, attach one rabbit head shape to the top of a large circle shape using icing, then attach one small circle for a tail

Decorate with icing, sweets, dried fruit and/or nuts as you choose - Delicious!
Icing

To make the icing, beat the butter in a large bowl until it's soft

Then add half the icing sugar and continue beating until smooth

At that point, add the remaining icing sugar with one tablespoon of the milk

Beat until creamy then add the food colouring and mix well

Don't forget, you can add extra icing sugar to thicken the mixture, or make it less stiff with a little extra milk if necessary
Tips
Easy to make using Rice Krispies® and fun to decorate.
You can use assorted sweets/dried fruit/nuts to decorate.
Variations
Microwave directions: Heat the butter and marshmallows in a microwave-safe bowl on HIGH for 3 minutes. After 2 minutes, stir the mixture until it's smooth, then simply follow steps 2-4. Microwave cooking times may vary
